"Z'' Apple Pie


Ah Yes,
The Monster Zucchini!
We all have one that hides from us don't we?

But that's just fine with me because I have the Best Recipe for those big boys ;)
AND IT IS YUMMY!!!

"Z" Apple Pie
*

6 cups Zucchini ~ peeled, seeded, sliced
2 1/4 cups sugar
1 1/2 teaspoons Cinnamon
1 1/2 teaspoons Cream of Tarter
1 1/2 teaspoons Lemon Juice
1/4 teaspoon Nutmeg
Dash of Salt

Peel and slice through the middle of the squash length wise. 
Remove seeds with a spoon.



Slice to resemble apple slices.


Cook in water until just tender.  Drain and place in cold water for 5 minutes.
Drain thoroughly. Mix all ingredients well and place into a 9 inch unbaked pie shell.  Dot with butter.  
Top with top crust, vent. Bake at 400* for 30 minutes or until golden brown.


The first time I made this I didn't tell my family it was Zucchini,
 they totally thought it was real Apple Pie!

Dollar Store Cross Transformation

 I saw this wooden cross in Dollar Tree and it spoke to me,
"make me pretty".

I looked around, surely I couldn't be the only one that heard that?
Too many days stuck in operation isolation?
Yep, my first day to the Dollar Tree in months.
I felt like a medium, but instead of spirits, 
I had all these goodies calling out to me!

I won't show a photo of what my cart looked like when I was done.
 Let's just say the little's had a huge box going their way too!
I had something for everyone....probably something they may not have wanted 
but I swear everything had sparkles and rainbows around emanating from them!!

But I digress, that plain little cross.

I got home packed up the little's goodies,
yeh, their parents are gonna kill me!

And started on the cross. The first thing I did was take off 
that burlap bow and thumb tack!

It definitely needed to get out of that drab gray.
A nice coat of Aqua Cool Pearl,
brightened it right up.


Next I pulled out my beads and embellishments


I found a medal with an Angel on it, which went in the center.
I surrounded it with metal lavender beads


Next I needed to put something around the edge. 
I had a bunch of bead caps that seemed just right.


So on they went with some
GE Silicone.


I lined the inside of the bead caps with a string of pearls.
Then filled in the empty spaces with 2 colors of clear aqua
bicones.  I ended up dotting the spaces between the bead caps
 with more metal lavender beads. 


The bottom looked bare. I covered it in rhinestone strips.
I really like the way it turned out. I only wish I would have gotten more.
It found it's home on top of my headboard shutters 


where it fits right in ♥

Meaning of American Pie by Don McLean (w/lyrics) ~ WW?

What an incredible piece of work. Follow the lyrics closely together with the photos.  They synchronize beautifully to explain each verse.  

Although Don McClean only released the song in 1971, for those of us who grew up in the ’50s and ’60s this is a great piece with some very poignant moments in the history of those times.  And for those of you who did not, it’s a taste of what you missed.

 I knew that  "American Pie" was the name of the plane in which Buddy Holly, Richie Valens, and The Big Bopper were killed when it crashed in 1958 – and I knew the chorus about music dying on that day.

I knew that there was a lot of symbolism.

 I just didn't know what it all meant

An Easy Dinner


As many of you who follow my blog know we spend most of our time in a variety of Drs. offices. By the time we get home, it's normal for some of the specialists to run 1 - 2 hours behind, the last thing I feel like doing is cooking.
 
This is pretty fast and easy, I usually use whatever vegetables I have leftover from a previous meal. 

Egg and Cheese Frittata

2 handfuls Ham, diced
12 eggs
3 cups Broccoli, cut up
2 Garlic Cloves, minced
2 1/2 Tablespoons grated Parmesan
1 cup Mozzarella, grated
1/4 Teaspoon Black Pepper, ground
1 Tablespoon Olive Oil

Instructions:

Preheat oven to 425*

In a 9 - 12'' oven safe saute` pan over medium-high heat, cook the Broccoli in Olive Oil until soft and very lightly browned, about 5 - 8 minutes.  Add Garlic and saute` another 2 - 3 minutes. 


Meanwhile, whisk eggs with Parmesan, Mozzarella, Ham and Pepper. Set aside.


After Broccoli/Garlic is soft and cooked through, add egg/cheese mixture and let cook 30 seconds over high heat.  Transfer the pan to the heated oven and let the Frittata cook until the eggs are just set, about 25 - 30 minutes.  Remove the pan from the oven and turn the Frittata out with a rubber spatula onto a serving plate.


Cut it like a pie and serve it up!
