Pina Colada Jam


This recipe was in our local newspaper last week. It caught my eye and since it calls for Zucchini I had to give it a try.  Eventually I'll get to the bottom of these Zukes!

Pina Colada Jam

6 cups sugar
6 cups Zucchini, peeled and shredded
1 (8oz) can Crushed Pineapple, undrained
1/4 cup Lime Juice
2 packages (3 oz each) Pineapple Gelatin
(I had to go to a couple different grocers to find this gelatin. It will be in the Hispanic section)
1 teaspoon Rum Extract


Combine sugar, zucchini, pineapple, and lime juice in a large pot.
Bring to boil.  Boil for 10 minutes, stirring constantly.


Remove from heat. Stir in gelatin and extract until gelatin is dissolved.


Immediately fill all jars or freezer containers leaving 1/2 inch head space. Wipe off top edges of containers.  Cool completely before covering with lids.  Refrigerate for up to 3 weeks or freeze for up to 1 year.


It is delicious! Reminds me of my Mom's Apricot Pineapple Jam she used to make each year.  Reminds me of my childhood so I really like it. My older children remember Nana's Jam so they like it too. The younger ones aren't quite sure yet, but they're coming around :)

Homemade Lowfat Christmas Cookies for Your Dog


Now you can treat your best friend and not feel guilty!
Our fur babies deserve Christmas Treats too!

Think of all they do for us -
keep us safe from strangers,
give the best kisses
and snuggles,
keep our feet warm,
and all those oh so adorable expressions
that make us laugh or smile!


Ingredients:
1 1/2 cups hot water
1 1/2 teaspoon chicken or beef bouillon powder
1/2 teaspoon garlic powder 
3 tablespoons olive oil
3 1/2 cups whole wheat flour
1/2 cup cornmeal
1/2 cup celery, finely chopped
1/2 cup shredded carrots
1/4 cup green pepper, finely chopped

Instructions:
Preheat oven to 350 degrees.


Mix hot water, oil, bouillon, and garlic powder.
Add flour, cornmeal and vegetables and mix well.


Sometimes it's just easier to use your hands to mix thoroughly :)


Knead dough on a floured surface for a minute or two.


Roll out to 1/4 inch thick, then cut into desired shape


Place on lightly greased cookie sheet in 350 degree oven for 30 minutes.
Let cool. Makes 3-4 dozen cookies, depending on the size you make.


Store in the refrigerator or in an airtight container.


Your best friends will love you even more!!

Making Key Chimes ~ Kids Craft


This is a fun and easy project for the littles! 
Not to mention inexpensive :)

We've been enjoying a late Fall here with temps still in the 70's.
Making the most of spending time outside while we can.

Sticks are always a magnet with little ones aren't they?
We decided to do something useful with them


After each choosing the "perfect" stick they were brought in


The painting began


Each had to be the perfect color ;)


Some pretty unique colors came out in mixing and creating 


While the sticks dried, they painted the keys.
 I tied the strings onto the sticks for them


Added a drop of Super Glue to each knot


Let everything dry thoroughly



They keys were added to the bottom of the strings


Each string received a beautifully colored key


Here they are in all their glory!


The littles were so excited to hear them tinkle in the breeze!
